Raw Zucchini “Rice” with Sweet & Sour Sauce
Even before going raw vegan, I was a huge fan of risottos. While experimenting, I found that vegetable rice can easily be created in a food processor. This is one variation with a fantastic sweet and sour sauce, which I make regularly. Like so many other raw recipes, this one will be easy and quick to prepare.
Raw Zucchini “Rice” with Sweet & Sour Sauce
Preparation time: 15 min.
Ingredients for 2 people:
For Zucchini “Rice”:
4 medium-sized zucchinis (approx. 25 oz/700g)
For sauce:
1 ripe mango
1-2 big red bell peppers
1/2 teaspoon of turmeric
1/2 inch (1 cm) of ginger root
1/2 teaspoon of sea salt
pinch of cayenne pepper
Methods/steps –
1. Put zucchinis into a food processor and process until you get a rice like texture.
2. Put all ingredients for sauce into a blender or food processor and process until well combined and creamy.
3. In a bowl, mix zucchini rice and processed sauce together.
4. Serve. Yummy…
