Raw Sweet Potato Chips
For this recipe, I accidentally bought red sweet potatoes which I used because nothing else was available. Usually I use white sweet potatoes, which perhaps aren’t as sweet as other sweet potatoes, but much tastier because of their fluffier consistency and more delicate flavor. Red and white sweet potatoes are hard to distinguish; you’ll probably have to check with the seller which one it is.
The best dips for sweet potato chips are Ajvar or Raw Ketchup. Enjoy.
Raw recipe: Sweet Potato Chips
Preparation time: 10 min.
Let it sit for: 60 min. or overnight
Dehydration: 8-12 hours
Ingredients for 2 people :
3 big white sweet potatoes
5 tablespoons of extra virgin olive oil
5 tablespoons of tamari soy sauce
1-3 teaspoons of red pepper powder (or as you like)
2 onions
pinch of cayenne pepper (or as you like)
Methods/steps –
1. Chop tomatoes and onions into chips shape. I use a mandolin.
2. Put all ingredients into a bowl and mix well.
3. Let it sit for about 60 min. or overnight.
4. Scatter all onto dehydrator sheets.
5. Dehydrate at 115ºF (46ºC) for 8 hours. Flip and continue drying on the other side. Let dry another 2-4 hours until dry.
Options:
To get softer chips, dehydrate 8-10 hours, for crispier 12 hours.
