Raw food recipe: Miso Zucchini Noodles

Another great recipe which is delicious, quick and easy to prepare. The main ingredients are Miso and Zucchini Noodles.

Miso is a fermented soybean paste with a salty taste, a buttery texture, and a unique nutritional profile. Fermentation ranges from 3 months to 3 years, which produces an enzyme-rich food. When purchasing miso, avoid the pasteurized version and spend your money rather on a live enzyme-rich product, which is loaded with beneficial microorganisms.

The noodles are made of zucchini, but you can use also squash or carrot. There are quite a few ways you can turn zucchini into noodles. Some people use julienne peelers. You can also use an ordinary potato peeler.

The most popular tool with which to make vegetable noodles is a Vegetable Spiralizer (special spiral vegetable cutter). I’ve been using my mandolin. If using a mandolin, use the thickest blade setting possible.

 

Preparing Miso Zucchini Noodles

Preparation time: 10 – 15 min.

 

Ingredients for 2 people:

 

For spaghetti:

4 medium-sized zucchinis (approx. 25 oz/700g)

 

For sauce:

1 ripe avocado

2-4 teaspoons of miso paste

1 fresh-squeezed lemon

pinch of cayenne pepper (optional)

1/2 teaspoon of Himalayan salt or other salt

1/2 cup of water

 

Methods/steps –

1. Slice zucchini with a mandolin, use the thickest blade.

2. Put all other ingredients for sauce into a blender.

3. Process until well combined and creamy.

5. In a bowl, mix zucchini noodles and processed sauce together.

6. Serve. Yummy…….
