Carrot Noodles with Green Pea Sauce

Our local organic farmers have grown lots of carrots and peas, and as you already know; these two are a perfect combination for a deliciously sweet meal.

The carrots will serve as noodles and the peas will be for the sauce on top.

Peas are a good source of protein, niacin, folate, iron and phosphorus, and a very good source of manganese and vitamins A, C, K and thiamin, but more important: don’t be surprised to find out that this sauce is as good as or better than the cooked version. It’s fresh and light, yet very satisfying. So don’t hesitate – try it!

The noodles are made of carrots, but you can also use squash or zucchini. There are quite a few ways you can turn carrots into noodles. Some people use julienne peelers. You can also use an ordinary potato peeler.

The most popular tool with which to make vegetable noodles is a Vegetable Spiralizer (special spiral vegetable cutter). I’ve been using my mandolin. If using a mandolin, use the thickest blade setting possible.

 

Raw recipe: Carrot Noodles with Green Pea Sauce

Preparation time: 15 min.

 

Ingredients for 2 people:

 

For spaghetti:

4-6 big-sized carrots (approx. 18 oz/500g)

 

For sauce:

1 1/2 cup of fresh young peas (shell them!)

1 ripe avocado

2 teaspoons of dill

1 fresh-squeezed lemon

1/2 teaspoon of sea salt

1/2 cup of water

 

Methods/steps –

1. Slice carrots with a mandolin, use the thickest blade.

2. Put all ingredients for the sauce into a blender or food processor.

3. Process until well combined and creamy.

4. Serve. Yummy…
